  • 8 ounces whole-wheat rigatoni
  • 24 ounces spaghetti sauce sugar-free, divided
  • 3/4 cup mozzarella cheese part-skim, shredded
  • 4 pieces boneless and skinless chicken breasts cut into cubes, if preferred
  • 1/4 cup Parmesan cheese shredded

Method
 

  1. Preheat your oven to 350 degrees.
  2. In a large mixing bowl, combine the cooked rigatoni, 3/4 of the spaghetti sauce, mozzarella cheese, and season with salt and pepper to taste.
  3. Spread the pasta mixture evenly in the bottom of a deep dish baking pan.
  4. Next, take the chicken breasts and place them on top of the pasta.
  5. Pour the remaining spaghetti sauce over the chicken, ensuring it’s well covered.
  6. Sprinkle the Parmesan cheese over the top.
  7. Place the baking pan in the preheated oven and bake for 30 minutes.
  8. After 30 minutes, check the chicken to ensure it’s cooked through.
  9. Once done, remove from the oven and allow it to cool for a few minutes before serving.
