Ingredients

Method
 

  1. Preheat your air fryer to 200C/400F.
  2. Slice each chicken breast lengthwise until you have 8 thin fillets.
  3. Place a sheet of plastic wrap on a chopping board, add two chicken fillets, then cover with another sheet of plastic wrap. Pound the chicken until around 1/4 inch in thickness. Repeat with all fillets.
  4. Add flour to one bowl, beaten eggs to another, and panko mixed with parmesan cheese and Italian seasoning to the last bowl.
  5. Season both sides of the chicken with salt and pepper. Dip each fillet in flour, then eggs, and finally coat with the panko mixture.
  6. Place a single layer of the breaded chicken cutlets in a greased air fryer basket and spray lightly with oil.
  7. Air fry for 8 minutes, flip, spray with oil again, and cook for another 6 to 8 minutes until golden.
  8. Remove the chicken cutlets from the air fryer and serve with fresh lemon.
