Ingredients

  • 2 breasts chicken about 1 lb, sliced into ¼ inch thick strips
  • 2 pieces bell peppers sliced into strips
  • 1 piece red onion sliced into strips
  • 2 cloves garlic minced
  • 2 tablespoons olive oil
  • 1 tablespoon chili powder
  • ½ teaspoon smoked paprika EACH
  • ½ teaspoon cumin EACH
  • ½ teaspoon ground coriander EACH
  • ½ teaspoon garlic powder EACH
  • ½ teaspoon onion powder EACH
  • ½ teaspoon salt EACH
  • ¼ teaspoon black pepper
  • Tortillas sour cream
  • Tortillas avocado sliced
  • Lime slices fresh cilantro for garnish

Equipment

  • Air Fryer

Method

  1. Preheat your air fryer to 400°F. This step is crucial as it helps achieve that golden, crispy texture we all love.
  2. In a large mixing bowl, combine the sliced chicken, bell peppers, red onion, and minced garlic. Drizzle with olive oil and add the chili powder along with the other spices. Gently mix everything together until the chicken is fully coated with the spice mixture.
  3. Transfer the mixture into the preheated air fryer basket. Be sure to spread it out evenly, allowing the hot air to circulate around everything.
  4. Cook for 15 minutes, shaking the basket halfway through to ensure even cooking. You’re looking for the chicken to be fully cooked and the edges of the vegetables to become lightly charred.
  5. If your air fryer basket is small, you may need to cook in batches. Just be patient; it’s worth it!
  6. Once cooked, remove the basket from the air fryer and garnish with fresh cilantro for that pop of color and flavor.
  7. Serve on warm tortillas with your favorite toppings like sour cream, sliced avocado, and a squeeze of fresh lime.
  8. Enjoy the delicious flavors and share with family and friends for a delightful meal experience!

Notes

  • Storage: Once completely cool, place chicken and veggies in an airtight container in the refrigerator for 3 to 5 days.
  • Reheat: Add the leftovers to the air fryer and set it to 350 degrees. Cook for 3 to 5 minutes until it is heated through.
