Method
 

  1. Preheat the air fryer to 375 degrees Fahrenheit.
  2. In a bowl or large gallon-sized baggie, combine the chicken thighs, vegetable oil, taco seasoning, and honey. Coat well.
  3. Place the marinated chicken into the air fryer basket in a single layer.
  4. Cook for 20 minutes, flipping halfway through, until golden brown.
  5. Remove from the air fryer and let cool slightly before chopping into bite-sized pieces.
  6. In each burrito size tortilla, place the chopped chicken, mozzarella cheese, red onions, and fresh spinach.
  7. Roll the tortillas tightly and wrap in foil.
  8. Place the wraps back in the air fryer for another 5 to 10 minutes to heat through.
  9. Remove and unwrap before serving with your favorite sauces.
