Ingredients
  

  • 1/4 cup everything bagel seasoning
  • 1/2 cup sesame seeds
  • 2 large egg whites
  • 1/2 cup whipped cream cheese (3 ounces)
  • 1/2 cup shredded reduced-fat cheddar cheese (2 ounces)
  • 1/4 cup chopped scallions
  • 8 chicken breast cutlets, thin-sliced (4 ounces each)
  • 1/2 cup chopped baby spinach
  • Olive oil spray

Method
 

  1. In a shallow bowl, combine the everything bagel seasoning and sesame seeds. Place the egg whites in another bowl.
  2. Preheat an air fryer to 375 degrees F.
  3. In a small bowl, combine the cream cheese, cheddar cheese, and scallions.
  4. Place the chicken cutlets on a cutting board. Spread 1 1/2 tablespoons of the cheese mixture on each cutlet, then put 1 tablespoon spinach leaves in the center of each. Roll up the chicken and place seam side down.
  5. Dredge each roll-up in the egg whites, then in the seasoning mixture, shaking off any excess as you go.
  6. Transfer in batches to the air fryer basket and spray the tops with oil. Cook for 15 minutes, turning halfway, until golden and crisp on the outside and cooked through in the center.
  7. Transfer the roll-ups to a plate and serve.

Notes

  • Don’t Have An Air Fryer? Make this dish in the oven! Bake the roll-ups at 425 degrees F, for 25 minutes.
  • Can’t Find Everything Bagel Seasoning? Combine 2 tablespoons dried minced onion, 2 tablespoons dried minced garlic, 2 tablespoons poppy seeds, 1 tablespoon white sesame seeds, 1 tablespoon black sesame seeds, and 1 tablespoon coarse salt.
  • To Store Leftovers: Let the air fried chicken cool completely before transferring the chicken to an airtight container. Keep in the refrigerator for up to 3-4 days.
