Ingredients
  

  • 4 pieces bone-in, skin-on chicken thighs
  • 1 tablespoon minced fresh scallions optional, for garnish
  • ¼ cup lemongrass powder
  • ¼ cup olive oil
  • ¼ cup soy sauce
  • ¼ cup lime juice from about 2 limes
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon garlic salt
  • 1 teaspoon lemon pepper seasoning

Method
 

  1. Combine the lemongrass powder, olive oil, soy sauce, lime juice, Worcestershire sauce, garlic salt, and lemon pepper seasoning in a small bowl. Stir until everything is well-mixed.
  2. Transfer the sauce to a large Ziplock bag. Add the chicken thighs into the Ziplock bag and seal, removing as much air as possible.
  3. Slosh the chicken around in the marinade and set in the refrigerator to marinate for 30 to 60 minutes.
  4. Preheat the air fryer to 350°F.
  5. Transfer the chicken skin side down to the air fryer basket and cook in the air fryer for 10 minutes.
  6. Flip the chicken and cook for an additional 7 to 8 minutes or until the internal temperature reaches 165°F.
  7. Remove the chicken from the air fryer and let it rest for 5 minutes.
  8. Plate and serve the chicken with minced scallions as a garnish.

Notes

  • Marination: You can marinate this chicken for as little as 30 minutes or up to 24 hours for more flavor.
  • Baking Instructions: Preheat the oven to 400°F, and bake for 30 to 35 minutes until fully cooked.
  • Grilling Instructions: Grill the marinated chicken for 6 to 8 minutes per side over medium-high heat.
