Ingredients
  

  • 2 large Chicken breasts butterfly sliced in half to make 4
  • ¼ cup All-purpose flour
  • ½ teaspoon Salt
  • ¼ teaspoon Ground black pepper
  • 2 eggs Whisked eggs
  • 1 cup Italian breadcrumbs or Italian panko
  • ¼ cup Freshly grated parmesan cheese
  • 1 teaspoon Italian seasoning blend
  • ¼ teaspoon Garlic powder
  • 1 cup Marinara
  • 1 cup Mozzarella
  • Optional Fresh parsley for garnish

Method
 

  1. Preheat the air fryer to 400 degrees.
  2. On a shallow plate, whisk together the flour, salt, and pepper. Set aside.
  3. In a small bowl, whisk together the eggs. Set aside.
  4. In a second shallow plate, mix together the breadcrumbs, parmesan cheese, Italian seasoning, and garlic powder. Set aside.
  5. Coat each chicken breast one at a time. First, dredge in the flour mixture, then dip in the egg, and finally coat with the breadcrumb mixture.
  6. Place the coated chicken breasts in the air fryer in a single layer.
  7. Cook for 10 minutes, flipping halfway through.
  8. Top each chicken breast with about ¼ cup marinara and ¼ cup mozzarella. Continue cooking for 1 additional minute or until cheese melts and chicken reaches 165 degrees.

Notes

  • Don’t overcrowd the air fryer basket: Place the chicken in a single layer with space in between.
  • Use an instant-read meat thermometer: Check the internal temperature to ensure it reaches 165 degrees F.
  • Spray the air fryer basket with nonstick cooking spray: This prevents sticking and helps the breading crisp up.
