Ingredients
  

  • 1 chicken 1 small free-range chicken up to 1.3 to 1.5 kg
  • 1 whole Zest of 1 ClemenGold clementine or orange
  • 200 ml 200 ml of freshly squeezed ClemenGold clementine juice
  • 200 ml 200 ml strong chicken stock
  • 3 cloves 3 cloves garlic, crushed
  • 1 piece 3 cm piece of ginger, finely grated
  • 4 sprigs 4 sprigs of thyme
  • Salt & pepper to taste
  • A drizzle of olive oil for moisture
  • 8 potatoes 8 medium/small potatoes approximately 700 grams
  • 2 Tbsp 2 Tbsp olive oil
  • 1 tsp 1 tsp smoked paprika
  • 1 tsp 1 tsp garlic powder

Method
 

  1. Add the zest and juice of the clementine to a small jug along with the chicken stock, garlic, and ginger. Mix well to combine all the flavors.
  2. Remove the drip tray from the air fryer basket and place the whole bird inside. Pour the citrus liquid over the chicken and scatter the thyme sprigs around it.
  3. Set the Vortex ClearCook Dual Air fryer to ‘Roast’ at 180C/350F and allow it to preheat.
  4. Start roasting the chicken with the breast facing up for 20 minutes.
  5. Gently flip the chicken over and roast for another 20 minutes.
  6. After 20 minutes, turn the chicken back to face up for the final 20 minutes.
  7. Once cooked, carefully remove the chicken and let it rest. Strain the pan juices into a bowl.
  8. Slice the potatoes in half and add olive oil, smoked paprika, and garlic powder. Toss to coat evenly.
  9. Tip the potatoes into the air fryer basket and set it to ‘Air Fry’ at 190C/374F for 30 minutes.
  10. Activate the Sync Cook button to ensure both the roast chicken and potatoes finish at the same time.
