  1. Start by slicing the zucchini into disks, about half an inch thick. This size allows them to cook evenly while still holding their shape. Ensure that each slice is uniform for the best results.
  2. Next, melt the butter in a small bowl. You want it just warm enough to be liquid, so it will easily coat the zucchini.
  3. In a separate bowl, mix the breadcrumbs, Parmesan cheese, and the Italian seasoning. This mixture will give the zucchini its crunchy coating. Make sure to combine it well so that the flavors are evenly distributed.
  4. Now, it’s time to prep the zucchini slices. Place them on a plate and let them sit for a few minutes. This step allows the zucchini to sweat, which helps to remove excess moisture. After a few minutes, take a paper towel and blot the slices gently.
  5. Dip each zucchini slice into the melted butter, ensuring it’s well-coated. Then, roll it in the breadcrumb mixture to cover it completely. Make sure each piece is evenly coated for that perfect crunch.
