Method
- Preheat oven to 350º F.
- Prepare Rice-A-Roni according to package directions.
- In a large bowl, stir together cream of chicken soup, sour cream, cream cheese, Italian dressing mix, and softened butter. Add shredded chicken, cooked rice, and ½ cup of shredded cheese, and stir to combine. Season with salt and black pepper, to taste.
- Spread rice mixture in a lightly sprayed 9×13 pan. Top rice with the remaining shredded cheese.
- Bake uncovered for 30 minutes.

- Tip 2: This recipe uses half of a package of cream cheese.
- Tip 3: I use Good Seasonings Italian Dressing Mix. Do NOT make the dressing. You are only using the seasoning packet.
- Tip 4: I suggest using Unsalted Cream of Chicken & Mushroom Soups in this dish to control the sodium.
