Angel Chicken Rice-a-Roni Casserole

Ingredients
  

  • 1 box chicken flavor Rice-A-Roni plus ingredients called for on the box
  • 1 can Unsalted Cream of Chicken Soup
  • ½ cup sour cream
  • ½ package cream cheese room temperature (4-oz)
  • 1 packet Good Seasons Italian dressing mix
  • 2 Tbsp butter softened
  • 4 cups cooked chopped chicken (or 1 whole Rotisserie Chicken)
  • 2 cups shredded colby jack cheese divided

Method
 

  1. Preheat oven to 350º F.
  2. Prepare Rice-A-Roni according to package directions.
  3. In a large bowl, stir together cream of chicken soup, sour cream, cream cheese, Italian dressing mix, and softened butter. Add shredded chicken, cooked rice, and ½ cup of shredded cheese, and stir to combine. Season with salt and black pepper, to taste.
  4. Spread rice mixture in a lightly sprayed 9×13 pan. Top rice with the remaining shredded cheese.
  5. Bake uncovered for 30 minutes.

  • Tip 3: I use Good Seasonings Italian Dressing Mix. Do NOT make the dressing. You are only using the seasoning packet.
  • Tip 4: I suggest using Unsalted Cream of Chicken & Mushroom Soups in this dish to control the sodium.
