Ingredients
  

  • 2 cups Flour spelt, white, or oat
  • 1.5 tsp Cinnamon
  • 3/4 tsp Baking Powder
  • 1/4 tsp Salt
  • 2/3 cups Sugar or coconut sugar
  • 3/4 cup Butter or coconut oil or almond butter
  • 3 tbsp Milk of choice or additional butter
  • 3 1/4 cup Diced Apple (2 large or 3 medium)
  • 1 tbsp Cornstarch or arrowroot
  • 2 tbsp Pure Maple Syrup or sweetener of choice

Method
 

  1. Preheat your oven to 350°F (175°C). This ensures that your bars bake evenly and develop a nice golden color.
  2. In a large mixing bowl, stir together the first five ingredients: flour, cinnamon, baking powder, salt, and sugar. Make sure everything is well combined.
  3. Next, cut in the butter or mix in the coconut oil. You want to achieve a crumbly texture, similar to wet sand.
  4. If you're using oil or unsalted butter, you might want to add an additional 1/4 teaspoon of salt for flavor.
  5. Press about 2/3 of the dough firmly into the bottom of an 8×8 inch pan lined with parchment paper. Make sure it’s even and compact.
  6. In another bowl, toss the diced apples with cornstarch and maple syrup. This will help absorb moisture and add sweetness.
  7. Spread the apple mixture evenly over the crust you just prepared in the pan.
  8. Sprinkle the remaining dough over the top of the apples, breaking it into chunks for a nice crumble effect.
  9. Press down gently on the top layer to ensure it adheres to the apples beneath.
  10. Bake in the preheated oven for 50 minutes or until the top is golden brown and the filling is bubbly.
  11. Once baked, let the bars cool in the pan. This will make slicing easier. For cleaner cuts, refrigerate the bars for a bit.
