Ingredients
  

  • 75g butter
  • 6 anchovy fillets
  • 1/2 garlic clove or 1/4 of a bigger one, crushed
  • 3 basil leaves
  • pinch dried chilli flakes
  • 20 asparagus spears woody ends trimmed off
  • about 20g Parmesan cheese enough to cover the spears

Method
 

  1. Preheat your oven to 160 degrees Celsius.
  2. In a small blender, combine the butter, anchovy fillets, crushed garlic, basil leaves, and a pinch of dried chilli flakes. Process these ingredients until smooth.
  3. Blanch the asparagus in boiling water for about 3 minutes. This quick cooking method brightens their color and enhances their flavor.
  4. Drain the asparagus and arrange them on a small oven tray. Dot the spears generously with the anchovy butter.
  5. Roast the asparagus in the preheated oven for about 3 minutes. You’ll know they’re ready when they’re tender yet still have a slight crunch.
  6. Carefully arrange the roasted asparagus on a serving plate. Drizzle any melted butter from the roasting dish over the top.
  7. Grate Parmesan cheese over the warm asparagus to create a delightful topping.
  8. Serve warm with some crusty bread.
