Ingredients
  

  • 2 chicken breasts I used the breast from a roasted chicken, cooked and shredded.
  • 1 avocado Mashed.
  • ¼ cup cilantro Chopped.
  • ½ small red onion Chopped.
  • 1 tablespoon lime juice
  • salt and pepper To taste.
  • 4 croissants Cut in half, or 8 slices of bread.

Method
 

  1. In a large bowl, combine the shredded chicken, mashed avocado, chopped cilantro, and red onion
  2. Add the lime juice to the mixture. This little addition is essential as it brightens the flavors. Don’t forget to season with salt and pepper to taste.
  3. Next, take your freshly baked or store-bought croissants and cut them in half carefully.
  4. Once the croissants are ready, divide the chicken and avocado mixture evenly over the halves.
  5. Finally, serve your Avocado Chicken Croissants immediately. They’re best enjoyed while the croissants are still warm and flaky.
