  • 6 to 8 pieces boneless, skinless chicken thighs
  • 1 cup apricot preserves
  • 3/4 cup Catalina dressing
  • 1 packet dry onion soup mix
  • 2 tablespoons Dijon mustard
  • 1/4 teaspoon cayenne pepper

Method
 

  1. Preheat oven to 375 degrees and lightly grease a 9×12-inch baking dish.
  2. Place chicken in baking dish.
  3. In a medium bowl, stir together the remaining ingredients.
  4. Pour mixture over chicken.
  5. Bake uncovered for 50 minutes.
  6. After 30 minutes, spoon the sauce over the chicken to coat it more.
