  • 1 green bell pepper cut into strips
  • 1/2 sweet yellow onion thinly sliced

  • 15 oz crushed tomatoes (1 can)
  • 1 tbsp balsamic vinegar
  • 1 tbsp dried oregano
  • 1 tsp dried basil
  • 1 tsp salt
  • 1/2 tsp ground black pepper
  • 1 cup mozzarella cheese shredded

Method
 

  1. Start by preparing your baking dish. Preheat the oven to 400˚F. In a 9×13 baking dish, place the sliced onions and bell peppers at the bottom. This forms a beautiful base for your dish.
  2. In a small bowl, mix together the oregano, basil, salt, and black pepper. This simple blend of spices will elevate the flavors of the chicken significantly.
  3. Next, take the cut chicken and place it in a single layer on top of the peppers. Season the chicken generously with the spice mixture. Make sure each piece is coated to enhance the overall flavor.
  4. In the same bowl, mix the crushed tomatoes, remaining spices, garlic, and balsamic vinegar. Pour this mixture over the chicken, ensuring it covers everything well. This will keep the chicken moist and flavorful while cooking.
  5. Now, it’s time for the oven! Place the baking dish in the oven uncovered and bake for about 35 minutes. The chicken should be cooked through, and the sauce will start bubbling.
