Preheat your oven to 400 degrees F and spray a large baking sheet with non-stick cooking spray.
Season the chicken with salt, pepper, cumin, and garlic powder. Grill the chicken for 5 to 6 minutes, flipping halfway until cooked. Cover with foil and let rest for 5 minutes.
Cut the chicken into strips and squeeze half of the lime juice over it. Set aside.
In a large cast iron skillet, heat over medium-high heat, and add the bell peppers and onions. Cook, stirring occasionally, until lightly charred and softened.
Squeeze the other half of the lime juice into the pan and season with more cumin, garlic powder, and salt. Remove from heat.
Warm the tortillas in the microwave until pliable. Divide the chicken, peppers, onions, and cheese among the tortillas. Fold to enclose filling.
Lay burritos seam side down on the baking sheet, spray tops with cooking spray, and bake for 10 to 15 minutes until golden brown.
Top with desired toppings and serve.
