Ingredients
  

  • 1 lb chicken breast boneless, skinless and cut into pieces
  • 1 tbsp potato flakes Instant mashed potatoes
  • 1/3 cup cold water
  • 1 tsp garlic salt or 1/2 tsp garlic powder + 1/2 tsp salt
  • 1/8 tsp black pepper
  • 2 1/2 cups corn flakes cereal (3/4 cup crushed)
  • 1/4 cup parmesan cheese finely grated

Method
 

  1. Preheat your oven to 375˚F. While it warms up, line a baking sheet with parchment paper. This is crucial as it prevents the nuggets from sticking and makes cleanup easier.
  2. Next, take 2 1/2 cups of corn flakes cereal and pulse them in a food processor until fine crumbs form. If you don’t have a food processor, you can put the flakes in a large zip-loc bag and crush them with a rolling pin. Mix 3/4 cup of these crumbs with 1/4 cup of finely grated parmesan cheese in a shallow bowl.
  3. In another bowl, combine 1 lb of chopped chicken pieces, 1 tbsp of potato flakes, 1/3 cup of cold water, 1 tsp of garlic salt, and 1/8 tsp of black pepper. Pulse this mixture until the chicken is finely chopped. You want a smooth consistency for the nuggets.
  4. With wet hands, take about 1 tbsp of the chicken mixture and roll it into a nugget shape. Flatten it slightly to ensure even cooking. Roll the nugget in the bowl of mixed corn flakes and parmesan, pressing gently so the crumbs stick.
  5. Once all the nuggets are shaped and coated, place them on your lined baking sheet. Make sure they’re spaced out to allow for even cooking.
  6. Put the baking sheet in the oven and bake for 15 minutes on the middle rack. Halfway through, flip the nuggets over to ensure they cook evenly. Keep an eye on them; you want them golden and cooked through.
  7. Once done, remove them from the oven and let them rest for a few minutes. This resting time allows the juices to redistribute within the nuggets, making them even juicier.
  8. Serve warm and enjoy with your favorite dipping sauces!
  9. As a bonus tip, if you choose to make a larger batch, you can freeze the shaped nuggets before baking. Freeze them flat for about an hour, then transfer them to zip-loc bags for up to three months. When ready to bake, just follow the same baking instructions.

Notes

Note: You can use 3/4 cup panko crumbs instead of corn flakes. To get the panko crumbs golden, spray nuggets with cooking spray before baking and bake for 13 min then broil nuggets additional 2 minutes to give them a golden glow.
