Ingredients
  

  • 2 cups boneless and skinless chicken breasts cooked, shredded
  • 1/2 cup sour cream fat-free
  • 1 cup cheddar cheese reduced-fat, shredded
  • 2 teaspoons ground cumin
  • 1 tablespoon chili powder
  • 1 teaspoon kosher salt
  • 1/4 teaspoon ground black pepper
  • 1 cup corn kernels canned or frozen (thawed)
  • 15 ounces black beans can, drained and rinsed

Method
 

  1. Preheat your oven to 400 degrees Fahrenheit. Spray a 9 x 13 inch casserole dish with nonstick spray.
  2. In a large mixing bowl, combine the shredded chicken, sour cream, half of the cheddar cheese, half of the cumin, half of the chili powder, kosher salt, and half of the ground black pepper. Mix well.
  3. In a second bowl, combine the corn kernels, black beans, and the remaining cumin, chili powder, and pepper. Mix well.
  4. Lay two of the tortillas at the bottom of the prepared casserole dish. Spread half of the chicken mixture evenly over the tortillas.
  5. Spread half of the bean mixture over the chicken.
  6. Place the remaining tortillas over the beans and repeat with the remaining chicken and bean mixtures.
  7. Sprinkle the remaining cheddar cheese on top.
  8. Bake for 20 to 30 minutes or until the cheese is melted and bubbly.
  9. Let it cool slightly before serving hot.
