Ingredients
  

  • 2 pounds boneless skinless chicken breast
  • 1 lemon juiced
  • ½ cup olive oil
  • 6 cloves garlic minced
  • 1 teaspoon kosher salt
  • 1 teaspoon ground black pepper
  • 1 teaspoon ground cumin
  • 2 teaspoons paprika
  • ½ teaspoon turmeric
  • 1/8 teaspoon ground cinnamon
  • 1/8 teaspoon crushed red pepper
  • 2 tablespoons chopped fresh parsley

Method
 

  1. Preheat your oven to 400˚F.
  2. Cut the chicken into bite-sized pieces, about 1 inch. This helps the chicken cook evenly and allows all the flavors to soak in.
  3. Place the chicken in a large baking dish.
  4. Add the lemon juice, olive oil, garlic, salt, pepper, cumin, paprika, turmeric, cinnamon, and red pepper flakes to the chicken. Stir until everything is evenly coated.
  5. Bake for 12 to 16 minutes, or until the chicken is cooked through at an internal temperature of 165˚F. Remove from oven and toss with fresh parsley.
  6. These can be served on their own, in a pita, or over rice. I like to serve with sliced cucumber, tomato, and onion.
