Ingredients

  • 3 cups shredded, roasted chicken
  • 1 teaspoon ground cumin
  • ½ teaspoon Kosher salt
  • ¼ teaspoon garlic powder
  • 1 cup shredded Mexican cheese
  • 12 pieces corn tortillas
  • cooking spray
  • topping options guacamole, sour cream, tomato, salsa as desired

Equipment

  • Oven
  • Mixing Bowl
  • Baking Sheet

Method

  1. Preheat your oven to 400℉. This temperature is crucial for achieving that perfect crispiness. Line a baking sheet with foil and generously spray it with nonstick spray to ensure easy cleanup.
  2. In a large mixing bowl, combine the shredded chicken, ground cumin, Kosher salt, and garlic powder. Mix well until the chicken is evenly coated with the spices. This is where the magic starts; the aroma will fill your kitchen!
  3. Next, add in the shredded Mexican cheese to the chicken mixture. This will add a creamy, delicious texture that brings everything together. Stir until fully incorporated.
  4. Now, it’s time to soften the tortillas. Place two corn tortillas at a time between two damp paper towels and microwave them for 20 to 30 seconds. This step is essential as it helps prevent cracking when you roll.
  5. With one warm tortilla in front of you, place about ¼ cup of the chicken mixture in the center. Roll it up tightly, ensuring the filling is snug inside. Place the taquito seam-side-down on the prepared baking sheet. Repeat this step with the remaining tortillas and filling, arranging them neatly on the baking sheet.
  6. Once all the taquitos are on the baking sheet, lightly spray the tops with cooking spray. This will help them turn a beautiful golden brown while baking.
  7. Pop the baking sheet into the preheated oven and bake the taquitos for 22 to 25 minutes. You'll know they are done when they are crisp and golden. Keep an eye on them to prevent over-browning!
  8. Remove the taquitos from the oven and let them cool for a minute before serving. They’re best enjoyed warm and fresh from the oven. Serve with your choice of guacamole, sour cream, salsa, or diced tomatoes for dipping.

Notes

  • Use a Rotisserie Chicken: Save time by using a store-bought rotisserie chicken. It’s a great shortcut and will still taste delicious!
  • Watch the Tortillas: Make sure to soften the tortillas well. If they’re too stiff, they’ll crack when rolling.
  • Experiment with Spices: Feel free to add other spices like chili powder or paprika for an extra kick!
  • Monitor While Baking: Keep a close eye on the taquitos as they bake to ensure they don’t overcook. You want them crispy but not burnt.
