Ingredients
  

  • 3 tablespoons Balsamic Vinegar
  • 1 tablespoon Olive Oil
  • ½ teaspoon Salt
  • ½ teaspoon Sugar
  • ½ teaspoon Ground Black Pepper
  • ½ teaspoon Ground Cumin
  • 2 tablespoons Fresh Cilantro
  • 1 15 ounce can Black Beans rinsed and drained
  • 1 15 ounce can Fire Roasted Corn drained
  • 1 Red Pepper diced
  • 1 Jalapeño seeded and diced
  • 2 Green Onions sliced
  • 8 6-inch Flour Tortillas
  • 2 cups Shredded Lettuce
  • 2 cups Shredded Cooked Chicken
  • 1 cup Shredded Cheese
  • Salsa
  • Sour Cream
  • Diced Tomatoes

Method
 

  1. In a small bowl, mix together balsamic vinegar, olive oil, salt, sugar, ground black pepper, and ground cumin.
  2. In a medium bowl, stir together black beans, red pepper, jalapeño, green onions, and fire roasted corn. Toss with the vinegar and oil dressing, and garnish with cilantro. Cover and refrigerate.
  3. Preheat oven to 375°F. Place tortillas on a large baking sheet and bake in preheated oven for 8 to 10 minutes or until golden and crisp.
  4. Top tortillas with shredded lettuce, chicken, cheese, corn, and black bean salsa and any other garnish options that you love. Serve immediately.
