Ingredients
  

  • 4 ounces cream cheese
  • cup salsa
  • ½ teaspoon cumin
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • 1 tablespoon lime juice
  • ¼ teaspoon salt
  • 2 cups cooked and shredded chicken
  • 1 cup shredded colby jack cheese
  • 1 tablespoon finely chopped green onion
  • 2 tablespoons finely chopped cilantro
  • 8-10 small flour tortillas

Method
 

  1. Preheat your oven to 425 degrees Fahrenheit. Prepare a baking sheet by lining it with foil and spraying it with cooking spray.
  2. Soften the cream cheese in the microwave for about fifteen to twenty seconds.
  3. In a mixing bowl, combine the softened cream cheese, salsa, cumin, chili powder, garlic powder, lime juice, and salt. Stir until combined.
  4. Add in the cooked and shredded chicken, shredded colby jack cheese, green onion, and cilantro. Mix everything well until combined.
  5. Take about three tablespoons of the filling and place it an inch from the edge of a flour tortilla. Roll it up and place it seam side down on the baking sheet.
  6. Repeat the rolling process with the remaining filling and tortillas.
  7. Bake for fifteen to twenty minutes or until the taquitos are lightly browned.
  8. Allow to cool slightly before serving with your favorite dips.
