  • 1 1/2 lbs chicken thighs 700 grams
  • 2 inch ginger peeled and chopped (5 cm)
  • 3 cloves garlic peeled and chopped
  • 1 tablespoon soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon honey
  • 1 teaspoon sesame oil
  • 3 dashes white pepper
  • 1 pinch salt

Method
 

  1. Begin by rinsing the chicken thighs under cold water. Pat them dry thoroughly with paper towels. This step is essential to ensure the marinade adheres well and the skin gets crispy during cooking.
  2. Next, in a bowl, combine the chopped ginger and garlic. Gently rub this mixture onto the chicken thighs, allowing the flavors to start infusing.
  3. Add the soy sauce, oyster sauce, honey, sesame oil, white pepper, and salt to the chicken. Stir everything together to ensure the chicken is well coated in the marinade.
  4. Let the chicken marinate for at least 30 minutes. If you have time, allowing it to marinate for a few hours or even overnight in the fridge will deepen the flavors significantly.
  5. Preheat your oven to 375°F (190°C). This temperature is perfect for roasting the chicken evenly, ensuring it cooks through while getting that lovely golden color.
  6. Line a baking tray with aluminum foil. This will help with easy cleanup and prevent the chicken from sticking. Arrange the marinated chicken thighs on the tray, spacing them evenly.
  7. Place the tray in the center of the oven and bake for 40 minutes. During this time, the chicken will cook through and the marinade will bubble and caramelize, creating a delicious glaze.
