- 1. Preheat your oven to 375º F. Getting the oven ready ensures your chicken cooks evenly and gets that perfect golden color.
- 2. Prep the lemons. Start by zesting two of the lemons and add the zest to a 9×13 baking dish. This will serve as the flavor base for your chicken.
- 3. Juice the same two lemons and keep the juice in a separate bowl for later use. The juice will brighten the dish and add acidity.
- 4. Slice the remaining lemons into 1/2-inch slices and set them aside. These will be used to garnish the dish and infuse a lovely lemon flavor while baking.
- 5. In the 9×13 baking dish with the lemon zest, add the flour, ground black pepper, and Stone House Seasoning. Whisk to combine everything until well mixed.
- 6. Add the chicken breasts to the baking dish and turn to coat each piece well. Ensure they are evenly coated with the flour mixture, which will help achieve a crispy crust.
- 7. Drizzle the olive oil into a medium skillet set over medium heat. Let the oil heat up so it can sear the chicken beautifully.
- 8. Add the chicken in a single layer to the skillet. Cook until the chicken is golden brown, about 5 minutes. Observe the color change; this will enhance the flavor.
- 9. Turn the chicken to cook the other side until it's golden brown as well, which should take about 5 more minutes. It's important to achieve even browning for a great texture.
- 10. Add the butter, chicken stock, reserved lemon juice, and the sliced lemons to the skillet. Mix well to combine.
- 11. Finally, place the skillet into the oven and bake until the chicken reaches an internal temperature of 165º F, checking with an internal thermometer. This typically takes about 20 to 25 minutes. You'll know it's done when the chicken is juicy and tender!
