Ingredients

  • 2 large Eggs beaten
  • ¼ cup Heavy cream or buttermilk
  • ¾ cup Freshly grated Parmesan cheese
  • ¾ cup Italian breadcrumbs
  • 1 teaspoon Ground paprika
  • 1 teaspoon Coarse sea salt
  • ½ teaspoon Ground black pepper
  • 8 Boneless, skinless chicken thighs
  • ¼ cup Salted butter (½ stick, melted)
  • Fresh oregano and/or thyme (optional, for garnish)

Equipment

  • 9×13-inch Baking Dish
  • 9×13-inch Baking Dish

Method

  1. Preheat your oven to 375°F (190°C) and spray two large baking dishes with nonstick spray to ensure your chicken doesn’t stick. This step is key for that satisfying crunch!
  2. In a small shallow bowl, combine the beaten eggs and heavy cream. This mixture will create a rich coating on your chicken, helping the breadcrumbs stick.
  3. In another shallow bowl, mix together the Parmesan cheese, Italian breadcrumbs, paprika, salt, and black pepper. This will be the crispy coating that elevates your chicken.
  4. Take each piece of chicken and dip it into the egg mixture, ensuring both sides are fully coated. Let any excess drip off so that the coating adheres properly.
  5. Next, dip the coated chicken into the Parmesan mixture, pressing down to fully coat the entire piece. You want a thick layer to achieve that glorious crunch!
  6. Arrange the coated chicken thighs in the prepared baking dishes without letting them touch. This allows for even cooking and prevents sogginess. If they touch, that part won’t get that delicious crunch!
  7. Drizzle the melted butter over all the chicken. This will help the coating to brown beautifully and add flavor.
  8. Cook the chicken for approximately 50 minutes or until it reaches an internal temperature of 165°F (73.8°C). During this time, you’ll want to keep an eye on it for the perfect golden-brown color.
  9. Once cooked, remove the chicken from the oven and let it rest for a few minutes. This allows the juices to redistribute, making sure every bite is juicy and tender.
  10. Garnish with fresh oregano or thyme, if desired, before serving to add a touch of freshness and color!

Notes

  • Freshly shredded cheese: Use freshly shredded Parmesan cheese for the best texture and flavor.
  • Use a wire rack: For extra crispy chicken, place a wire rack inside the baking dish to lift the chicken slightly off the surface. This allows air to circulate underneath, helping both sides crisp evenly.
  • Air Fryer Instructions: Preheat your air fryer to 375°F for 3 minutes and spray the basket with nonstick spray. Bread the chicken as directed, place in a single layer in your air fryer basket, drizzle with butter, and air fry for 14 to 18 minutes, flipping halfway through, or until 165°F.
  • Resting period: Let the chicken rest for 5 minutes before serving so the juices redistribute. It keeps the meat tender and prevents the coating from slipping off when cut.
  • Meal prep tip: If you’re making this for meal prep, let the chicken cool completely before refrigerating so the crust doesn’t turn soggy!
