- To make the marinade, start by whisking together the Greek yogurt, olive oil, lime juice, and minced garlic in a small bowl until combined.
- In a large bowl, season the chicken drumsticks with cumin, oregano, paprika, cayenne pepper, kosher salt, and honey. Use your hands to coat each piece thoroughly, ensuring each drumstick is well seasoned.
- Pour the yogurt mixture over the chicken and use a spoon to stir it all together. Make sure every piece is covered in marinade.
- Cover the bowl with plastic wrap and refrigerate for at least 1 hour. This allows the flavors to penetrate the chicken, making it incredibly juicy.
- Once you're ready to bake, preheat your oven to 400 degrees F. This high temperature will help achieve a crispy exterior while keeping the inside moist.
- Prepare a large baking sheet by placing a rack on it and greasing it with nonstick cooking spray. This prevents the chicken from sticking and promotes even cooking.
- Arrange the marinated chicken drumsticks on the rack, placing the thicker part of each drumstick toward the outside. This ensures they cook evenly.
- Place the baking sheet in the oven and bake for 40 to 50 minutes, or until the chicken is cooked through. It should be golden brown and reach an internal temperature of 165 degrees F.
- While the chicken is baking, prepare the avocado lime dipping sauce. In a high-powered blender or food processor, combine the avocado, Greek yogurt, chopped cilantro, minced garlic, and lime juice.
- Blend until smooth and creamy. Season with salt and pepper to taste. Adjust the flavors as necessary; if you want it tangier, add more lime juice!
- Once the chicken is ready, you can drizzle the avocado lime sauce over the top or serve it alongside for dipping. I often like to add a little hot sauce for an extra kick!
