Ingredients

  • 2 to 3 lbs bone-in chicken thighs
  • 3 Tbsp avocado oil
  • 3 Tbsp rice vinegar
  • 3 Tbsp liquid aminos or coconut aminos
  • 1 cup basil leaves
  • 1 large clove garlic
  • 1 Tbsp pure maple syrup (optional)
  • 1/4 tsp sea salt

Equipment

  • Oven
  • Baking Sheet
  • Blender

Method

  1. Add the ingredients for the marinade to a small blender and blend until smooth.
  2. Place the raw chicken pieces in a zip lock bag (or glass tupperware container) and pour in all of the marinade. Seal the bag and slosh it around until all of the chicken is submerged in marinade. Refrigerate at least 1 hour (up to 10) for best results.
  3. When you’re ready to bake, preheat the oven to 350 degrees F.
  4. Transfer the chicken along with the marinade to a casserole dish. Bake on the center rack of the preheated oven for 30 minutes. Increase oven temperature to 425 degrees F and bake another 10 minutes, or until chicken is cooked through and skin is nice and crispy.
  5. For crispier skin, place oven on the high broil setting and move the chicken to the second-to-the-top shelf. Broil for 3 to 5 minutes, until skin is nice and crispy.
  6. Serve with your favorite side dishes and enjoy!

Notes

  • Tip 1: Leftovers can be stored in an airtight container in the fridge for up to three days. Reheat gently in the oven to maintain crispiness.
  • Tip 2: You can freeze the marinated chicken before cooking. Just make sure to thaw it in the fridge overnight before baking.
  • Tip 3: Serve this Basil Crispy Baked Chicken with a light salad or roasted vegetables to balance the richness of the dish.
  • Tip 4: Experiment with other herbs like rosemary or thyme if you want to switch up the flavor profile.
  • Tip 5: Add some red pepper flakes or a dash of hot sauce to the marinade for a spicy variation!
