  • 1 cup Frozen corn kernels
  • 1 15-oz can Creamed corn
  • 1 cup Sour cream
  • 1 8.5-oz box Cornbread mix
  • 2 large Eggs
  • 3 cups Cooked chopped chicken
  • 1 cup BBQ sauce
  • 1 cup Shredded cheddar cheese

Method
 

  1. Preheat your oven to 350ºF and prepare a 9×13-inch baking dish with cooking spray.
  2. In a bowl, combine the frozen corn kernels, creamed corn, sour cream, cornbread mix, and eggs until mixed well.
  3. Pour the mixture into the prepared dish.
  4. Bake for about 40 minutes or until golden brown.
  5. Toss the cooked chopped chicken with BBQ sauce.
  6. Remove the cornbread from the oven and top with the chicken mixture.
  7. Sprinkle shredded cheddar cheese over the top.
  8. Bake for an additional 10 to 15 minutes until the cheese melts.
