Method
- In a large bowl, whisk together kosher salt, black pepper, smoked paprika, garlic powder, onion powder, oregano, basil, thyme, and cayenne pepper.
- Cut chicken tenderloins into bite-sized pieces. Place chicken in the bowl, tossing to coat.
- Heat olive oil in a large skillet over medium-high heat.
- Add chicken to the pan in a single layer and cook for 2 to 3 minutes on one side to get a nice sear. Flip the chicken and continue cooking until the chicken is cooked through and reaches an internal temperature of 165ºF, approximately 3 to 4 minutes.
Notes
- Tip 1: You can use any raw chicken you prefer. Boneless skinless chicken breasts, chicken thighs or chicken tenderloins all work great.
- Tip 2: Use a meat thermometer to check the internal temperature of the chicken. Chicken needs to be 165ºF.
- Tip 3: Can substitute butter for olive oil.
- Tip 4: Are Blackened Chicken Bites spicy? Yes. There is a kick to the chicken from the cayenne pepper. Reduce the amount to your personal preference.
- Tip 5: Are Blackened Chicken Bites low carb? Yes! All of the ingredients in this recipe are low carb, keto-friendly, and gluten-free.
- Tip 6: Store leftovers in an airtight container in the refrigerator.
