Ingredients

  • 1 tsp Kosher salt
  • 1 tsp Black pepper
  • 1 tsp Smoked paprika
  • 1 tsp Garlic powder
  • 1 tsp Onion powder
  • 1 tsp Oregano
  • 1 tsp Basil
  • 1 tsp Thyme
  • 1 tsp Cayenne
  • 1.5 lb Chicken tenderloins
  • 1 Tbsp Olive oil

Equipment

  • Chef Knives
  • Cutting Board
  • Mixing Bowls
  • 12-inch Non-Stick Skillet

Method

  1. In a large bowl, whisk together kosher salt, black pepper, smoked paprika, garlic powder, onion powder, oregano, basil, thyme, and cayenne pepper.
  2. Cut chicken tenderloins into bite-sized pieces. Place chicken in the bowl, tossing to coat.
  3. Heat olive oil in a large skillet over medium-high heat.
  4. Add chicken to the pan in a single layer and cook for 2 to 3 minutes on one side to get a nice sear. Flip the chicken and continue cooking until the chicken is cooked through and reaches an internal temperature of 165ºF, approximately 3 to 4 minutes.

Notes

  • Tip 1: You can use any raw chicken you prefer. Boneless skinless chicken breasts, chicken thighs or chicken tenderloins all work great.
  • Tip 2: Use a meat thermometer to check the internal temperature of the chicken. Chicken needs to be 165ºF.
  • Tip 3: Can substitute butter for olive oil.
  • Tip 4: Are Blackened Chicken Bites spicy? Yes. There is a kick to the chicken from the cayenne pepper. Reduce the amount to your personal preference.
  • Tip 5: Are Blackened Chicken Bites low carb? Yes! All of the ingredients in this recipe are low carb, keto-friendly, and gluten-free.
  • Tip 6: Store leftovers in an airtight container in the refrigerator.
