Ingredients

  • 3 pounds beef bottom round roast
  • 1/4 cup butter room temperature
  • 1 tablespoon salt
  • 1 tablespoon fresh rosemary chopped
  • 1 teaspoon mustard seeds
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon black pepper

Equipment

  • Oven
  • Mixing Bowl
  • Baking Sheet
  • Chef's Knife
  • Frying Pan

Method

  1. Preheat your oven to 260C (500F). This high temperature will help create a nice crust on the roast.
  2. Pat the meat dry with a paper towel. This step is crucial as it helps the seasonings stick better.
  3. Using kitchen twine, tie the roast securely. This keeps it together during cooking and helps it cook evenly.
  4. In a small bowl, combine butter and spices. Mix until creamy. This compound butter will form a flavorful crust on the roast.
  5. Spread the seasoned butter all over the roast with your hands, making sure to cover every side.
  6. Place the roast in a roasting pan. It’s essential to choose a pan that can hold the juices that will accumulate during cooking.
  7. Cook the roast in the preheated oven for 10 minutes. This initial high heat will help sear the outside.
  8. After 10 minutes, turn the oven off and leave the door open for another 10 minutes. This helps the roast continue cooking gently.
  9. Turn the oven back on to 200C (400F) and let the roast cook for another 55 minutes or until the internal temperature reaches 135F.
  10. Once done, remove the roast from the oven and let it rest on a cutting board for 15 minutes. This allows the juices to redistribute throughout the meat for optimal flavor.
  11. Slice the roast against the grain and serve immediately. Enjoy the fruits of your labor with your favorite sides!

Notes

  • Tip 1: Let leftover beef cool to room temperature, then store it in an airtight container in the fridge for 2 to 3 days.
  • Tip 2: Wrap the leftover beef in aluminum foil or place it in a freezer-safe container, then freeze for 2 to 3 months. Thaw in the fridge before reheating.
  • Tip 3: Consider marinating the roast overnight for extra flavor and tenderness.
  • Tip 4: This roast pairs wonderfully with roasted vegetables, mashed potatoes, or a fresh salad.
  • Tip 5: You can also adapt this recipe for a slow cooker. Just sear the meat first and then cook on low in the slow cooker for 6 to 8 hours.
