Ingredients

  • 3 to 4 pounds beef brisket point end
  • 1 ½ teaspoons salt
  • 1 ½ teaspoons black pepper
  • 1 ½ teaspoons garlic powder
  • 1 teaspoon ancho chile powder
  • 1 cup spicy-sweet barbecue sauce
  • 1 cup Coca-Cola I used a mini Coke

Equipment

  • Oven
  • Mixing Bowl
  • Baking Sheet
  • Chef's Knife
  • Blender
  • Food Processor
  • Frying Pan
  • Wooden Spoon

Method

  1. Start by preheating your oven to 225 degrees Fahrenheit. This low temperature is essential for perfectly cooked brisket, ensuring it becomes tender without drying out.
  2. Set out a rimmed baking sheet and place the brisket point end on it. This will catch any drippings as it cooks.
  3. In a small bowl, mix together the salt, black pepper, garlic powder, and ancho chile powder. This spice blend is your secret weapon for adding flavor.
  4. Rub the spice mixture over the entire surface of the brisket. Make sure to cover every inch; this is crucial for a tasty bark.
  5. If you have a smoker, you can choose to smoke the brisket at 225 degrees Fahrenheit until it reaches 195 degrees internal temperature. Insert a meat thermometer to track the progress.
  6. If you’re using the oven, place the brisket directly in the preheated oven. Insert the meat thermometer probe and bake until the internal temperature reaches 195 degrees Fahrenheit, which usually takes around 3 to 5 hours depending on the brisket size.
  7. Once the brisket is close to reaching the desired temperature, prepare your sauce. In a 9 by 13 inch baking dish, pour in the barbecue sauce and Coca-Cola. Stir it gently to combine.
  8. When the brisket hits that magic 195 degrees, remove it from the oven and let it rest briefly. Use a serrated knife to cut the brisket into 1 inch chunks, moving them quickly to the sauce mixture to keep all those delicious juices.
  9. Once all the brisket is chopped, stir the pieces to coat them in the sauce thoroughly.
  10. Now, return the dish to the oven (or smoker) and continue cooking for an additional hour. This will thicken the sauce and crisp up the exposed pieces of brisket, giving you that perfect texture.
  11. Finally, stir once more to ensure even coating and serve warm. Enjoy your delicious Brisket Burnt Ends!

Notes

Once the meat has cooled, store it in a sealed container in the refrigerator for up to 4 days. If you want to keep the burnt ends longer, they can be frozen for up to 3 months. Make sure to place them in an airtight zipper bag or container. For the best results, defrost the brisket pieces in the fridge overnight and reheat in the microwave or stovetop with a bit more barbecue sauce. These burnt ends are traditionally served as an appetizer but can also be the main attraction of a barbecue plate, paired with southern sides. Feel free to experiment with different barbecue sauces, as each variation can lead to new flavor experiences.
