  • 1 large egg
  • 2 tsp. water
  • 3/4 cup whole wheat seasoned bread crumbs
  • 2 cups broccoli florets (cooked, chopped small)
  • 5 slices reduced fat Swiss cheese
  • 1 pinch salt

Method
 

  1. Preheat your oven to 350 degrees Fahrenheit. This is an essential step to ensure even cooking of your chicken.
  2. In a small bowl, combine the egg, water, and a pinch of salt. Beat with a fork until the mixture is smooth; set this aside for later.
  3. Fill a second bowl with bread crumbs. The seasoned bread crumbs will add the perfect crunchy texture to your chicken.
  4. Slice each chicken breast into thin cutlets. Each half should yield about three cutlets. This step is crucial as it helps the filling cook evenly. If you prefer, you can pound the cutlets to make them even thinner.
  5. Cut each slice of cheese in half. Take one half and place it in the center of each cutlet, topping it with a little chopped broccoli. This is where the magic happens!
  6. Wrap the chicken around the filling to completely cover the cheese, using toothpicks to secure them if necessary. It's essential to make sure the filling is fully enclosed.
  7. Next, season the outside of the wrapped chicken with a little more salt to enhance the flavor.
  8. Dip each wrapped chicken into the egg wash, ensuring it's fully coated, then roll it in the bread crumbs until evenly breaded.
