Ingredients
  

  • 3 cups Shredded cooked chicken
  • ¼ to ½ cup Hot sauce or more to your taste
  • 4 oz Cream cheese softened
  • 2 cups Shredded cheddar cheese
  • 1 tsp Onion powder
  • 1 cup All-purpose flour
  • 4 large Eggs lightly beaten
  • 3 cups Corn flakes cereal crushed

  • Small Cookie Scoop
  • Mixing Bowls
  • Rotary Cheese Grater

Method
 

  1. Preheat oven to 350˚F. Line a large baking sheet with parchment paper.
  2. In a large bowl, mix the chicken, cream cheese, and hot sauce until combined. Stir in the cheddar cheese and onion powder.
  3. Using a small cookie scoop, spoon out the chicken mixture and roll into about 1½ inch balls. Place on a plate or separate baking sheet until ready to dip.
  4. In three separate bowls, set out the flour, eggs, and crushed corn flakes. Dip each chicken ball first into the flour, then the egg, and ending with the corn flakes. Place on the prepared baking sheet.
  5. Bake for 20 to 25 minutes. Serve warm with ranch or blue cheese dressing.

Notes

  • Tip 1: I used rotisserie chicken for the cooked chicken.
  • Tip 2: I used Frank’s Hot Sauce, but feel free to use your favorite brand.
  • Tip 3: Are Buffalo Chicken Bites spicy? There is a kick from the hot sauce; adjust the amount to your personal preference.
  • Tip 4: Can Buffalo Chicken Bites be made in advance? Yes! You can assemble them and refrigerate until ready to bake.
  • Tip 5: Can they be frozen? Yes! Place the dipped chicken balls onto a parchment-lined baking sheet and freeze. Transfer to a freezer bag until ready.
