Ingredients
  

  • 2 cups cooked chicken cut into small cubes
  • 1 brick cream cheese 8 oz, softened
  • 1 bottle red hot sauce 5 oz
  • 1 cup shredded cheddar cheese divided
  • 1/2 cup crumbled blue cheese
  • cayenne pepper
  • chopped fresh scallions optional
  • celery and/or pita or tortilla chips for serving

Method
 

  1. Preheat your oven to 400 degrees Fahrenheit. While it’s heating, take a 1-1/2 quart casserole dish and grease it with nonstick cooking spray to ensure your dip comes out smoothly.
  2. In a mixing bowl, combine the cooked chicken, cream cheese, hot sauce, 1/2 cup shredded cheddar cheese, blue cheese, and a pinch of cayenne pepper. Mix everything together until it’s well blended. I like to use a fork or a hand mixer for this step to get a nice consistency.
  3. Spoon the mixture into the prepared baking dish and spread it evenly across the bottom. This ensures that every bite gets that creamy goodness.
  4. Sprinkle the remaining cheddar cheese on top of the dip. This will create a deliciously cheesy crust once it’s baked.
  5. Place the dish in the oven and bake for 15 to 18 minutes. You’ll know it’s ready when the dip is hot in the center and bubbly around the edges, with the cheese melted beautifully.
  6. Once done, take it out of the oven and let it sit for a few minutes. This resting time helps the dip set just a little.
  7. Sprinkle with chopped scallions for a pop of color and flavor before serving. It makes a lovely presentation!
