Ingredients
  

  • 1 loaf French bread cut in half
  • 1.5 pounds boneless, skinless chicken breasts cut into 1-inch pieces
  • 2 tablespoons olive oil
  • 0.25 teaspoon salt
  • 0.25 teaspoon pepper
  • 2 cloves garlic minced
  • 2/3 cup buffalo wing sauce + extra for drizzling
  • 1 tablespoon unsalted butter
  • 3 tablespoons ranch dressing
  • 12 ounces fontina cheese freshly grated
  • 6 ounces crumbled gorgonzola cheese
  • 4 green onions thinly sliced
  • 1 bunch cilantro chopped

Method
 

  1. Start by placing an oven rack in the middle of your oven and heating your broiler to high. This will ensure that everything cooks evenly while getting that lovely crispy texture on top. Place the French bread, cut-side up, on a baking sheet and set it in the oven for about 2 minutes. Keep a close eye on it as ovens may vary. Rotate the bread and broil for an additional 2 minutes until it’s slightly golden. Once done, remove it from the oven and let it cool for a moment.
  2. While the bread cools, heat a large skillet over medium-high heat and add the olive oil. Add the pieces of chicken that you've tossed with salt and pepper. Cook the chicken until it’s browned on all sides, which should take around 10 to 12 minutes. Once the chicken is thoroughly cooked, add the minced garlic and stir for about 30 seconds to release its wonderful aroma.
  3. Next, pour in the buffalo wing sauce and add the butter. Stir everything together to coat the chicken evenly with that spicy, buttery goodness.
  4. Now it’s time to assemble! Brush 1 1/2 tablespoons (or more if desired) of ranch dressing onto each cut side of the French bread. Next, top each piece with 2 to 3 tablespoons of buffalo wing sauce, then sprinkle a light layer of fontina cheese on top.
  5. Evenly distribute the cooked chicken over the cheese, making sure to spoon out all of the delicious sauce from the skillet. Don’t skimp on the toppings! Finish by covering the chicken with the remaining fontina cheese and a sprinkle of gorgonzola cheese.
  6. Place the assembled bread under the broiler on the same center rack for 5 to 6 minutes. Watch closely, rotating the pan once or twice to ensure even cooking. Your goal is to melt the cheese until it’s bubbly and slightly golden while the bread becomes wonderfully crunchy.
  7. Once the cheese has melted to perfection, remove the Buffalo Chicken French Breads from the oven. Drizzle with more buffalo wing sauce if desired, then sprinkle with the sliced green onions and cilantro.
