Ingredients
  

  • 12 oz dried macaroni pasta
  • 2 teaspoons Cajun or Creole seasoning
  • ½ cup mayonnaise
  • 2 cups chopped cauliflower
  • 2 cups peas and carrots frozen

Method
 

  1. In a large bowl, combine mayonnaise and Cajun seasoning. Stir until well mixed and set aside.
  2. Cook the macaroni pasta according to the package directions. Drain and transfer into the large bowl with the mayonnaise and seasonings.
  3. To the bowl, add the chopped cauliflower, peas, and carrots. Toss everything together until well combined.
  4. Cover and refrigerate for approximately 2 hours or until ready to serve.
  5. Store any leftovers in the refrigerator for up to 3 days.
  6. Place the pasta salad inside your favorite lunch container.
