Ingredients

  • 4 cups shredded cooked chicken about two large breasts
  • 2 cups instant rice
  • 10.5 ounces cream of chicken soup (1 can)
  • 1 cup sour cream
  • 1 red bell pepper seeded and diced
  • 1 large onion diced
  • 1.5 cups chicken broth
  • 1.12 ounces packet fajita seasoning
  • 2 cups shredded Mexican blend cheese

Equipment

  • Oven
  • Mixing Bowl
  • Baking Sheet
  • Blender
  • Wooden Spoon
  • Cutting Board

Method

  1. Preheat your oven to 350 degrees Fahrenheit. This is crucial for ensuring your casserole bakes evenly and thoroughly. While the oven is heating, you can prepare your baking dish.
  2. Lightly spray a 9×13 inch baking dish with nonstick cooking spray. This will help prevent sticking and make serving easier.
  3. In a large bowl, stir together the chicken, uncooked rice, cream of chicken, sour cream, diced onion, chicken broth, diced bell pepper, fajita seasoning, and half of the cheese. Make sure everything is well combined for even flavor distribution.
  4. Pour the mixture into the prepared dish and spread it out evenly. This step ensures that every part of the casserole cooks uniformly.
  5. Wrap the dish tightly in aluminum foil. This helps keep moisture in while baking, allowing the flavors to meld beautifully.
  6. Bake in the preheated oven at 350 degrees Fahrenheit for 35 to 40 minutes or until it is bubbling. You’ll know it’s done when you see the edges bubbling and the top is slightly golden.
  7. Remove from the oven, top with the remaining cheese, and return to the oven, uncovered, until the cheese is melted, about 5 minutes. This step adds that irresistible cheesy layer!
  8. Let rest for 5 minutes before serving. This waiting time allows the casserole to set, making it easier to cut and serve.

Notes

  • Tip 1: Allow leftovers to cool completely and then wrap the casserole dish in plastic wrap or aluminum foil. You can also transfer leftovers to an airtight container.
  • Tip 2: Store your casserole leftovers in the refrigerator for 3 to 4 days to keep them fresh.
  • Tip 3: Leftover chicken and rice fajita casserole will also freeze for up to 3 months. Just ensure it's well sealed.
  • Tip 4: Replace the chicken with black beans or chickpeas for a hearty vegetarian version.
  • Tip 5: Add jalapeños or your favorite hot sauce to kick up the heat.
  • Tip 6: Consider adding fresh cilantro, avocado slices, or a dollop of pico de gallo for added flavor.
