Preheat your oven to 375°F. While it heats, line a sheet tray with a layer of foil. Next, cover that foil with a sheet of parchment paper. This setup will help ensure that the matzos don’t stick and make cleanup a breeze.
Take your matzos and lay them evenly on the prepared sheet tray. If necessary, break or cut them into smaller pieces to fit. You want a uniform layer so that every piece gets that delicious toffee topping.
In a heavy-bottomed saucepan, combine the butter, brown sugar, and a generous pinch of sea salt. Cook over medium heat, whisking constantly until the mixture comes to a boil. This usually takes about 2 to 4 minutes. Keep an eye on it; you don’t want it to scorch!
Once boiling, let it continue to cook for an additional 3 minutes while stirring constantly. You want to achieve that perfect toffee consistency, so don’t skip this step!
Remove the saucepan from the heat and carefully pour the hot toffee mixture over the prepared matzos. Use a spatula to spread it evenly across the entire surface of the matzos. Work quickly; the toffee will start to cool and get sticky!
Now, place the baking sheet in your preheated oven, then immediately reduce the heat to 350°F. Bake for 15 minutes. Check frequently to ensure the mixture doesn’t start to burn. If you notice it browning too quickly, quickly remove it from the oven and lower the temperature to 325°F.
After 15 minutes, carefully remove the tray from the oven. Sprinkle the chopped chocolate chips evenly over the top. The heat from the toffee will melt them beautifully.
Let everything stand for about 5 minutes. Once the chocolate has softened, use a spatula to spread it evenly over the matzo. Make sure to cover every inch!
Sprinkle the chopped pistachios and a light sprinkle of sea salt over the melted chocolate. This adds not just flavor, but a lovely visual effect as well.
While the matzos are still warm, break them into smaller squares or pieces. It’s best to do this now, while they’re still warm, as they’ll be easier to handle.
Finally, place the pieces in the freezer until the topping has set. Serve straight from the freezer, chilled, or at room temperature. My personal favorite is to enjoy them chilled!
