Ingredients
  

  • ¾ cup all-purpose flour
  • ¾ cup granulated sugar
  • ½ cup unsweetened cocoa powder
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • ¾ cup milk
  • ¼ cup melted butter
  • 1 cup semi-sweet chocolate chips
  • ¼ cup unsweetened cocoa powder
  • ¾ cup light brown sugar
  • 1 ¼ cups boiling water

Method
 

  1. Preheat the oven to 350°F. Set out an 8 X 8-inch baking dish and spray it with nonstick cooking spray.
  2. Set out a mixing bowl. Combine the batter ingredients: flour, granulated sugar, cocoa powder, baking powder, and salt. Whisk well, then whisk in the milk and melted butter. Finally, whisk in the chocolate chips. Scoop the batter into the prepared dish and spread out evenly.
  3. For the magic topping: sprinkle the additional cocoa powder over the top of the batter. Then sprinkle the brown sugar over the top of the batter. Finally pour boiling water over the top of the cake batter and DO NOT STIR.
  4. Carefully place the cake pan in the oven and bake for 30 minutes.
  5. Allow the cake to cool for 5-10 minutes, then scoop deep into the cake to make sure you have cake and pudding in each scoop.

Notes

To store leftovers: Cool the pudding cake completely before covering the dish or transferring it to an airtight container. Keep in the fridge for up to 5 days.
