Ingredients
  

  • 1 cup All-Purpose Flour
  • 1/2 cup Unsweetened Cocoa Powder
  • 1 1/4 teaspoons Baking Soda
  • 1/4 teaspoon Salt
  • 2 large Eggs
  • 1/2 cup Vegetable Oil
  • 1/2 cup Brown Sugar packed
  • 1/4 cup Granulated Sugar
  • 1 teaspoon Vanilla Extract
  • 1 1/2 cups Shredded Zucchini packed
  • 3/4 cup Semi-Sweet Chocolate Chips

Method
 

  1. Preheat the oven to 350°F.
  2. In a medium bowl, whisk together all-purpose flour, cocoa powder, baking soda, and salt.
  3. In a large bowl, whisk together eggs, vegetable oil, brown sugar, granulated sugar, and vanilla extract until smooth.
  4. Add the dry ingredients to the wet ingredients and stir until just combined.
  5. Fold in the shredded zucchini and chocolate chips.
  6. Grease a 9×5-inch loaf pan with cooking spray.
  7. Pour the batter into the prepared loaf pan and bake for 50-55 minutes, or until a toothpick inserted into the center comes out clean.
  8. Once baked, remove the loaf from the oven and let it cool in the pan for about 10 minutes.
  9. Carefully turn the loaf out onto a wire rack to cool completely.
