Ingredients

  • 1 ½ cups Dates roughly chopped
  • ½ cup Dried Cranberries
  • ¼ cup Whey Vanilla Protein Powder additional for rolling
  • ¼ cup Slivered Almonds
  • 1–1 ½ tsp Orange Zest
  • 2 tsp Coconut Oil melted

Equipment

  • Mixing Bowl
  • Chef's Knife
  • Blender
  • Food Processor

Method

  1. Start by placing the chopped dates and cranberries into a food processor. Process them until they break down and become crumbly. You want them to be well mixed but not pureed; a few chunks are welcome for texture.
  2. Once the fruits are crumbly, add the whey protein powder, slivered almonds, and orange zest to the food processor. Mix until everything is well combined. You’ll notice the mixture becomes thicker and begins to stick together.
  3. With the processor still running, gradually pour in the melted coconut oil. This step is crucial as it helps bind the mixture further. Continue processing until the mixture forms a sticky ball. Depending on the power of your processor, this may take a few minutes.
  4. Next, prepare a shallow plate by sprinkling some extra whey protein powder on it. This will be used for rolling the balls.
  5. Take about 1 tablespoon of the sticky mixture and roll it between your hands to form a ball. You can make them larger or smaller depending on your preference.
  6. Once rolled, place the balls onto the plate with the whey protein powder. Gently roll each ball around to coat it, shaking off any excess powder.
  7. Transfer the coated balls to a container and store them in the refrigerator until ready to use. They’ll firm up slightly as they chill.
  8. When you’re ready to enjoy, take one out and let it sit at room temperature for a few minutes if you want a softer texture. Then, devour it!

Notes

  • Storage: Keep your energy balls stored in an airtight container in the refrigerator. This will keep them fresh for up to a week.
  • Freezing: Yes, you can freeze these! Place them in a single layer on a baking sheet and freeze until solid. Once frozen, transfer them to a freezer-safe container for up to three months.
  • Pairing: Enjoy these energy balls on their own, or pair them with a smoothie for a balanced breakfast or snack.
  • Adjust Sweetness: You can modify the amount of orange zest based on your taste preference. Start with less and add more for a bolder flavor.
  • Texture Variations: Feel free to toss in some chia seeds or cocoa powder for an extra nutritional boost and unique flavor.
  • Serving Size: Roll the mixture into bite-sized balls for easy snacking or larger ones for a more filling treat.
