Start by placing the chopped dates and cranberries into a food processor. Process them until they break down and become crumbly. You want them to be well mixed but not pureed; a few chunks are welcome for texture.
Once the fruits are crumbly, add the whey protein powder, slivered almonds, and orange zest to the food processor. Mix until everything is well combined. You’ll notice the mixture becomes thicker and begins to stick together.
With the processor still running, gradually pour in the melted coconut oil. This step is crucial as it helps bind the mixture further. Continue processing until the mixture forms a sticky ball. Depending on the power of your processor, this may take a few minutes.
Next, prepare a shallow plate by sprinkling some extra whey protein powder on it. This will be used for rolling the balls.
Take about 1 tablespoon of the sticky mixture and roll it between your hands to form a ball. You can make them larger or smaller depending on your preference.
Once rolled, place the balls onto the plate with the whey protein powder. Gently roll each ball around to coat it, shaking off any excess powder.
Transfer the coated balls to a container and store them in the refrigerator until ready to use. They’ll firm up slightly as they chill.
When you’re ready to enjoy, take one out and let it sit at room temperature for a few minutes if you want a softer texture. Then, devour it!
