- Start by preheating a large pot over medium heat. Once it’s nice and warm, add the butter. Watch as it melts and begins to bubble, releasing a rich and inviting aroma.
- Add the diced onion, carrot, and garlic to the pot. Stir them together and let them sauté for about five minutes. This step is crucial as it builds the base of flavors.
- Next, it’s time to stir in the sliced button and cremini mushrooms. Sauté them for another five minutes until they begin to soften and release their juices. You want them to become tender and flavorful.
- Now, pour in the chicken stock (or vegetable broth) along with the poultry seasoning and thyme. Bring this mixture to a boil, stirring occasionally. The bubbling broth will infuse the mushrooms and vegetables with incredible flavor.
- Once it’s boiling, reduce the heat and let it simmer for about fifteen minutes. This is where the soup develops a rich depth of flavor. Don’t forget to taste and adjust the seasoning with salt and pepper.
- After simmering, remove the pot from the heat. If you prefer a smoother texture, use an immersion blender to puree the soup to your desired consistency. Alternatively, you can carefully transfer the soup in batches to a traditional blender.
- Once blended, return the soup to the pot and stir in the half & half. This is where the magic happens! Stir until well combined and creamy.
- Before serving, taste the soup again. Adjust the seasonings as needed. Maybe you want more salt or a dash of extra thyme.
- Finally, serve the Cream of Mushroom Soup hot, garnished with some freshly cracked pepper or fresh herbs, if desired. Enjoy the comforting warmth and rich flavors!

When storing leftovers, it’s best to refrigerate them in an airtight container for up to three days. If you want to freeze this soup, do so without adding the cream, as it can change texture upon thawing. You can always stir in fresh cream when reheating.
