Ingredients
  

  • 8 oz pasta any shape
  • 1 lb boneless skinless chicken breasts cut into small bite size pieces
  • 3 tablespoons fajita seasoning homemade or store bought packet
  • 2 tablespoons olive oil
  • 1 bell pepper any color, seeded and sliced
  • 1 medium onion sliced
  • 5-6 cloves fresh garlic minced
  • 1 cup heavy cream
  • 1/2 cup cheddar cheese

Method
 

  1. In a large pot of boiling salted water, cook pasta according to package instructions until al-dente. Reserve ½ cup of pasta water before draining.
  2. Season chicken breast pieces with fajita seasoning. Heat olive oil in a large heavy-duty skillet over medium-high heat. Add the chicken pieces to the pan and cook for 2-3 minutes or until the chicken is browned and cooked through.
  3. Add the sliced bell peppers, onion, and minced garlic to the pan. Stir for 2-3 minutes or until onion is tender.
  4. Stir in the heavy cream and the reserved pasta water. Bring to a gentle simmer then stir in the pasta and cheese. Stir and simmer for 5 minutes or until the cheese is fully melted and all the flavors are combined.
  5. Top with fresh minced cilantro, serve immediately.

Notes

  • Tip 1: To make fajita seasoning, combine 1 tablespoon cornstarch, 2 teaspoons chili powder, 1 teaspoon salt, 1 teaspoon paprika, 1/2 teaspoon cumin, 1/2 teaspoon onion powder, 1/2 teaspoon garlic powder, and 1/4 teaspoon cayenne pepper.
  • Tip 2: To save time, use pre-cut bell peppers which can be found in the freezer aisle in most supermarkets.
