Ingredients
  

  • 1 tablespoon avocado oil
  • ½ small red onion chopped
  • 1 ½ lbs chicken breasts or tenders
  • 1 teaspoon sea salt to taste
  • 1 15-oz can full fat coconut milk
  • 4 cloves garlic minced
  • 2 teaspoons dried parsley
  • 2 teaspoons lemon zest
  • 2 tablespoons lemon juice to taste
  • 3 stalks green onion chopped

Method
 

  1. Add the avocado oil to a large skillet and heat to medium-high.
  2. Add the chopped red onion and sauté, stirring occasionally, until onion begins to sweat, about 2 to 3 minutes.
  3. Sprinkle both sides of the chicken breasts with sea salt and place them in the hot skillet. Allow them to brown for 2 to 3 minutes per side.
  4. Add the remaining ingredients to the skillet and stir everything around. Bring to a full boil, then reduce the heat slightly.
  5. Continue cooking at a full, controlled boil until the sauce reduces by ⅓ to ½ its original volume and the chicken is cooked through, about 10 to 15 minutes.
  6. Serve with your choice of sides and enjoy!

Notes

  • If you're using standard boneless chicken breasts: be sure to slice them in half (length-wise) to create a thinner cutlet. This ensures the chicken cooks quickly, evenly, and doesn't dry out.
