Ingredients

  • 1 cup granulated sugar
  • 1 cup water
  • 2 pounds frozen mango chunks
  • 2 tablespoons light corn syrup
  • 1/4 teaspoon fine-grain sea salt

Equipment

  • Blender

Method

  1. 1. Begin by gathering your ingredients. You’ll need granulated sugar, water, frozen mango chunks, light corn syrup, and fine-grain sea salt. Ensure everything is ready to go for smooth blending.
  2. 2. In a blender, combine the sugar and water. Pulse it together until the sugar has fully dissolved. This step is crucial as it creates a sweet base for your sorbet.
  3. 3. Next, add in the frozen mango chunks, salt, and light corn syrup. Blend everything together until it reaches a smooth consistency. You may need to stop and scrape down the sides to make sure all the ingredients are fully incorporated.
  4. 4. Once your mixture is completely smooth, check for sweetness. You can adjust if needed, but I find the mango is naturally sweet enough!
  5. 5. If you’re eager to enjoy your sorbet right away, you can serve it immediately. It will be soft but delicious!
  6. 6. For later enjoyment, transfer the mixture to a freezer-safe container with a lid. Spread it out evenly and cover tightly. This will help with even freezing.
  7. 7. Place the container in the freezer and allow it to set for about two hours. Remember, good things take time!
  8. 8. Once it’s set and cold, your Creamy Refreshing Mango Sorbet is ready to scoop. Serve it in bowls or cones, and enjoy!
  9. 9. Store any leftovers in the freezer for up to two weeks. Just remember, if it hardens too much, let it sit at room temperature for a few minutes before scooping.

Notes

  • Tip 1: Corn syrup helps keep sorbet smooth and less icy. You can leave it out, but the texture won’t be quite as dreamy.
  • Tip 2: Cook time includes 2 hours in the freezer.
  • Tip 3: You can substitute the 2 pounds of frozen mangos for 3 large mangos or about 4 cups of fresh diced mangos. It is important to note that if you do this, you will need to allow your sorbet to set in the freezer for a few hours before it is ready to enjoy.
  • Tip 4: You can substitute the sugar for honey or maple syrup. Just follow the same process as you do with the sugar.
