Ingredients
  

  • 1 pound chicken breast
  • 4 tablespoons olive oil
  • 1 tablespoon minced garlic

  • 5 diced Roma tomatoes
  • ¼ cup chicken broth
  • 1 cup loosely packed basil leaves, roughly chopped
  • ¼ cup heavy cream

Method
 

  1. To begin, take a medium skillet and add 4 tablespoons olive oil and 1 tablespoon minced garlic. Heat gently over medium heat to infuse the oil with the garlic flavor.
  2. Next, season 1 pound chicken breast generously with salt and pepper on both sides. Carefully slide the chicken into the pan, allowing it to sear. Cook over medium-high heat for about ten minutes, flipping halfway through, until the chicken is golden brown and cooked through.
  3. Once the chicken is done, remove it from the skillet and place it on a plate to rest. This helps keep the juices sealed within the chicken, making it even more succulent.
  4. In the same skillet, add 5 diced Roma tomatoes and ¼ cup chicken broth. Season with additional salt and pepper to taste. Let this cook for about eight to ten minutes, stirring occasionally until the tomatoes have softened and a thick sauce forms.
  5. After the sauce has thickened, stir in 1 cup loosely packed basil leaves, roughly chopped and ¼ cup heavy cream. Mix well to incorporate all the ingredients.
  6. Finally, return the cooked chicken breasts to the pan. Simmer it all together for an additional two minutes, allowing the flavors to meld beautifully.
  7. Serve the Creamy Tomato Basil Chicken immediately, perhaps over a bed of pasta or alongside a fresh green salad.
