- To begin, take a medium skillet and add 4 tablespoons olive oil and 1 tablespoon minced garlic. Heat gently over medium heat to infuse the oil with the garlic flavor.
- Next, season 1 pound chicken breast generously with salt and pepper on both sides. Carefully slide the chicken into the pan, allowing it to sear. Cook over medium-high heat for about ten minutes, flipping halfway through, until the chicken is golden brown and cooked through.
- Once the chicken is done, remove it from the skillet and place it on a plate to rest. This helps keep the juices sealed within the chicken, making it even more succulent.
- In the same skillet, add 5 diced Roma tomatoes and ¼ cup chicken broth. Season with additional salt and pepper to taste. Let this cook for about eight to ten minutes, stirring occasionally until the tomatoes have softened and a thick sauce forms.
- After the sauce has thickened, stir in 1 cup loosely packed basil leaves, roughly chopped and ¼ cup heavy cream. Mix well to incorporate all the ingredients.
- Finally, return the cooked chicken breasts to the pan. Simmer it all together for an additional two minutes, allowing the flavors to meld beautifully.
- Serve the Creamy Tomato Basil Chicken immediately, perhaps over a bed of pasta or alongside a fresh green salad.
