  1. Begin by greasing your slow cooker with nonstick cooking spray. This prevents the pecans from sticking and ensures easy cleanup. Once greased, pour in 4 cups of raw pecan halves, spreading them evenly across the bottom of the slow cooker.
  2. Next, in a mixing bowl, add 1 egg white. Beat it with a whisk or fork until it becomes foamy. This foamy texture is essential for coating the pecans evenly.
  3. Pour the foamy egg white over the pecans. Using a spatula, gently mix to ensure every pecan is coated. This step is crucial as it helps the sugars adhere to the nuts later on.
  4. Now, sprinkle in 1/2 cup of brown sugar, 1 cup of sugar, 5 teaspoons of cinnamon, and 2 teaspoons of vanilla. Mix again until all the pecans are thoroughly coated with the sugary mixture.
  5. Place the lid on the slow cooker and set it to low. Allow the pecans to cook for approximately 2 to 2.5 hours. At around the 2-hour mark, give them a good stir. This ensures even cooking and helps with the candying process.
  6. After stirring, add 1/4 cup of water. This addition helps to create a glaze that binds to the pecans, enhancing their flavor.
  7. Continue cooking for the remaining time. You’ll notice the pecans starting to take on a lovely golden color and the sweet aroma filling your kitchen.

The pecans should safely harden after they are done roasting in the crock pot and left out to dry. However, if you find yourself in the issue of sticky pecans, turn to the oven. Place pecans on parchment paper and bake on 325 for about 10 minutes. Then let cool.
  • Can candied pecans be frozen? Yes, you can freeze pecans in an airtight zip lock bag to use later. They last about 2 months in the freezer and 3 weeks in the fridge.
  • How long do pecans last on the counter? This question might not even be needed as you will find that you probably eat the whole bag pretty quickly. But they can be stored for about 7-10 days as long as the humidity isn’t high. As always, make sure they are free from too much air.
