- Preheat your oven to 350F. Make sure to move the rack to the middle position; this will ensure even cooking. A well-preheated oven is key for perfectly baked bars.
- In a large, microwave-safe bowl, melt the butter. It's ideal to let it cool for a few minutes while you prepare the rest of the ingredients. This helps avoid cooking the egg when mixed.
- Line an 8x8 baking dish with tin foil and spray it with non-stick spray. This makes for easy removal of the bars later. Trust me; you’ll appreciate this little step!
- Add the egg, vanilla extract, and brown sugar to the bowl with the melted butter. Stir until it's smooth and well combined. This mixture should look glossy; it's the base of your delicious cookie bars.
- Next, gently stir in the baking powder and all-purpose flour. Be careful not to over-mix; a few lumps are fine. You want to keep the texture light and fluffy.
- Now, fold in the white chocolate chips and the Cadbury Mini Eggs. If you want, you can even crush the mini eggs slightly for a more dispersed candy throughout.
- Transfer the batter to your prepared baking dish. Use a spatula to smooth it out evenly so that it bakes uniformly.
