Ingredients
  

  • 1 – 1/14 pound chicken breast Anywhere from 1 to 1 & 1/4 pounds of chicken is ideal
  • 2 cans white chili beans do not drain
  • 1 can corn
  • 1 packet white chili seasoning mix
  • 32 ounces low sodium chicken broth

  • Slow Cooker

Method
 

  1. Add the chicken, white chili beans, corn, seasoning mix, and chicken broth to the crockpot. Cover and cook on low for 4 hours.
  2. Remove the chicken and place it on a cutting board or plate to shred using 2 forks.
  3. Using an immersion blender, puree chili for 5 to 10 seconds to thicken slightly.
  4. Add the shredded chicken back into the crockpot and stir to combine.
  5. Serve with sour cream, avocado, shredded cheese, chips, lime, cilantro, or your favorite toppings.

Notes

  • Frozen chicken: May be used in place of fresh. Watch the cooking time, as slow cookers may vary.
  • Thicker chili: Puree more of the chili for a thicker chili.
  • Bean variations: Any variety of white beans may be used in place of chili beans if drained and rinsed first.
  • Blender alternative: You can make this with a traditional blender by pureeing one cup of chili until smooth and then adding it back to the pot.
  • Texture preferences: Skip the blending step if you prefer a chili that’s more soup like.
