Ingredients
  

  • 1 pound lean ground beef
  • 1/2 medium onion chopped
  • 3 cloves garlic minced
  • 1 tablespoon Worcestershire sauce
  • 1/2 teaspoon Italian seasoning
  • 1/2 cup sour cream
  • 1 can (10.5 ounce) condensed cream of mushroom soup
  • 1 can (12 ounce) corn drained
  • 2 cups shredded cheddar divided
  • 32 ounces frozen tater tots see note
  • Salt & pepper to taste
  • Chopped scallions for serving (optional, to taste)

Method
 

  1. Preheat your oven to 375°F (190°C) and position the oven rack in the top third.
  2. In a large skillet over medium-high heat, add the ground beef and onions. Cook, stirring occasionally, for about 7 to 8 minutes until the beef is browned and the onions are soft. If there’s excess grease, carefully spoon it out.
  3. Next, add the garlic, Worcestershire sauce, and Italian seasoning to the skillet. Stir everything together and let it cook for about a minute until the garlic is aromatic.
  4. Lower the heat to medium, then stir in the sour cream, condensed soup, and corn. Mix until everything is well combined and heated through, about two minutes.
  5. Transfer the beef mixture into a 9x13-inch casserole dish, smoothing it into an even layer.
  6. Sprinkle half of the cheddar cheese over the beef mixture, allowing it to melt into the layers.
  7. Now, it’s time for the star of the show! Top the casserole evenly with the frozen tater tots. Arrange them closely for the best results.
  8. Bake the casserole, uncovered, for 45 minutes. Look for the tater tots to be golden brown and crispy, and the cheese to be bubbling wonderfully.
  9. Once done, remove it from the oven and let it cool for a few minutes. Serve hot with chopped scallions and add salt and pepper to taste.
